BRITTNEY PAWLICK: Owner and Director of Operations

Brittney graduated from Wilfred Laurier University in 2010 with an honors BA in Criminology and a minor in Psychology. Upon graduation Brittney worked for the Ministry of Child and Youth Services Probation on contract (2010) and Cuthbert House Open Custody Detention Facility for young males as an on-call/casual caseworker (2010 – 2012). In September of 2012 a job shortage for full time permanent positions with the Ministry of Children and Youth Services reached an all-time low and Brittney was forced to find work in a more stable and consistent organization. Brittney made the decision to go back to the hospitality industry. Brittney’s career in the service industry began in 2004, working in various high volume restaurants in Toronto and abroad. Following her passion for the service industry brought Brittney to building and fabricating Curbalicious Food Truck. In October of 2013 Brittney launched Curbalicious Food Truck, a contemporary gourmet food truck inspired by modern Canadian home-style cuisine. Brittney is a self-taught cook and entrepreneur. Brittney’s dedication to hard-work, customer service and passion has helped her to push forward and receive recognition as one of Toronto’s top food trucks.

As owner and Director of Operations, Brittney oversees all day to day operations, client bookings and client communications, event management and driving and working on Curbalicious Food Truck. Brittney is trained in Frist Aid/CPR, WHIMIS training and holds a food handlers certificate. Brittney is continually learning and growing, by broadening her skills in design (Adobe Illustrator, InDesign and Photoshop), business management and the culinary arts.

In addition to Curbalicious Food Truck, Brittney is also the founding partner and Operations Director of Providore Catering Company http://www.providorecatering.com. Providore Catering was established in 2015 with co-founder and partner Chef Tallis Voakes. Providore Catering is a full service catering company servicing the GTA and surrounding areas providing clients with Modern Canadian Cuisine.

 

TALLIS VOAKES: Executive Chef

Tallis Voakes hails from Merrickville Ontario, where his pursuit of all things culinary began at the age of sixteen. After attending culinary arts at Le Cordon Bleu, Ottawa, Chef Voakes was offered a job at Nobu, in London, UK. While in London, Chef Voakes received the opportunity to work with chefs Jason Atherton (Gordon Ramsay’s Maze & Pollen Street social), Anthony Demetre (Arbutus), Fergus Henderson (St. Johns) and Hamish Brown (Roka). In 2012 Chef Voakes was brought on as Executive Chef of Paintbox Bistro and Catering, here in Toronto to over a 180 seat restaurant and café, along with a full scale catering company.

In 2014 Chef Voakes opened Small Town Food Co., a 42 seat restaurant in the heart of Toronto’s Parkdale where Chef Voakes was able to hone his skills in Modern Canadian Cuisine.

Tallis was brought on to Curbalicious in 2015 to help the brand expand its culinary endeavors. He brings his exceptional skill in the kitchen and management experience to the company. Chef Voakes leads the kitchen team at Curbalicious where he is always looking for pushing the creative envelope and expanding the company. Chef Voakes is trained in First Aid/CPR, WHMIS and holds a food handler’s certificate. Chef Voakes continues to grow as a chef by collaborating with top chefs in the City of Toronto, working with new products and produce and staying current on trends.
